Delicious Pina Colada Cake

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 12
  • 1 (18 ounce) pkge. cake mix
  • 1 (3 ounce) instant coconut cream pudding mix or 1 (3 ounce) instant vanilla pudding or 1 (3 ounce) cheesecake flavor instant pudding and pie filling
  • 4 eggs
  • 1/2 cup water
  • 1 tablespoon rum extract, plus water to make 1/3 cup
  • 1/4 cup oil
  • 1 cup flaked coconut (optional)
  • icing
  • 1 (8 ounce) can crushed pineapple in juice
  • 1 1/2 teaspoons rum extract, plus
  • water, to make 1/4 cup
  • 1 (3 ounce) pkge. instant coconut cream pudding mix or 1 (3 ounce) instant vanilla pudding or 1 (3 ounce) cheesecake flavor instant pudding and pie filling
  • 1 (8 ounce) container frozen whipped topping
  • 1 cup flaked coconut

Recipe

  • 1 blend all ingredients except coconut.
  • 2 beat 4 minutes at medium speed.
  • 3 stir in coconut.
  • 4 pour into 2 greased and floured 9 inch layer cake pans.
  • 5 bake at 350 degrees for 25-30 minutes.
  • 6 frosting.
  • 7 combine all ingredients except whipped topping and coconut; beat until blended.
  • 8 fold in whipped cream.
  • 9 frost. sprinkle with coconut. chill.
