Delicious Pina Colada Cake

Ingredients

- 1 (18 ounce) pkge. cake mix
- 1 (3 ounce) instant coconut cream pudding mix or 1 (3 ounce) instant vanilla pudding or 1 (3 ounce) cheesecake flavor instant pudding and pie filling
- 4 eggs
- 1/2 cup water
- 1 tablespoon rum extract, plus water to make 1/3 cup
- 1/4 cup oil
- 1 cup flaked coconut (optional)
- icing
- 1 (8 ounce) can crushed pineapple in juice
- 1 1/2 teaspoons rum extract, plus
- water, to make 1/4 cup
- 1 (3 ounce) pkge. instant coconut cream pudding mix or 1 (3 ounce) instant vanilla pudding or 1 (3 ounce) cheesecake flavor instant pudding and pie filling
- 1 (8 ounce) container frozen whipped topping
- 1 cup flaked coconut
Recipe
- 1 blend all ingredients except coconut.
- 2 beat 4 minutes at medium speed.
- 3 stir in coconut.
- 4 pour into 2 greased and floured 9 inch layer cake pans.
- 5 bake at 350 degrees for 25-30 minutes.
- 6 frosting.
- 7 combine all ingredients except whipped topping and coconut; beat until blended.
- 8 fold in whipped cream.
- 9 frost. sprinkle with coconut. chill.
