Delicious Low-fat Falafels

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 19 ounces chickpeas (canned, drained, and rinsed)
  • 1 onion (chopped)
  • 3 garlic (chopped)
  • 1 tablespoon lemon juice
  • 1 teaspoon coriander
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon cumin
  • 1 teaspoon caynee pepper
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 1. mix everything in a food processor.
  • 2 2. roll into ping-pong sized balls.
  • 3 3. place balls on baking sheet lined with parchment paper and slightly flatten.
  • 4 4. bake for 20 minutes at 375°f.
  • 5 5. broil for a few minutes to make outsides crunchy.
  • 6 6. serve on warm pita with chopped tomatoes, red onion, scallions, lettuce, cucumber, pepper, and tzatiki
  • 7 7. to make your own simple tzatiki, mix grated cucumber (peeled and seeded), salt, garlic, chives, lemon juice, and plain low-fat yogurt!
