Creamy Veggie Soup

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 -2 carrot, chopped
  • 1 -2 stalk celery, chopped
  • 1 cup frozen broccoli
  • 1 (8 ounce) can french style green beans
  • 1/2 an onion, chopped
  • 1 (8 ounce) can asparagus
  • 3 garlic cloves, finely chopped
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup butter
  • 1/2 cup flour
  • 1 1/2 cups milk
  • 1/2 cup cheddar cheese

Recipe

  • 1 soak broccoli in water untill thawed.
  • 2 drain green beans and asparagus.
  • 3 saute carrots, celery, onions and garlic untill soft.
  • 4 add green beans, asparagus, and broccoli.
  • 5 cook 2-4 minutes add salt, pepper, and red pepper flakes.
  • 6 add 1/2 cup flour to make a roux, cook 1-2 minutes.
  • 7 add 1-1/2 cups milk and cook untill thick.
  • 8 add 1/2 cup cheddar cheese.
  • 9 puree in blender untill smooth and there are no chunks.
  • 10 return to pot. season with salt and pepper.
