Creamy Vegetable Chowder

Ingredients

- cooking spray
- 1/2 cup chopped onion
- 2 cups diced potatoes
- 2 1/2 cups chicken broth
- 10 ounces frozen mixed vegetables, thawed
- 1/2 cup chopped red bell pepper
- 1 teaspoon chopped fresh thyme
- 1/8 teaspoon crushed hot pepper flakes
- 1 tablespoon chopped fresh basil
Recipe
- 1 spray saucepan with cooking spray. sauté onion for 3 minutes.
- 2 add potatoes and 2 cups of chicken broth. bring to a boil. reduce heat and simmer until potatoes are tender, about 10 minutes. remove from heat and let cool slightly.
- 3 in a food processor, puree potato mixture until smooth. pour soup back into saucepan.
- 4 stir in remaining chicken broth, mixed vegetables, bell pepper, thyme and hot pepper flakes. return to a boil. cover and simmer until vegetables are tender, about 8 minutes.
- 5 serve garnished with basil.
