Creamy Vegetable Chowder

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • cooking spray
  • 1/2 cup chopped onion
  • 2 cups diced potatoes
  • 2 1/2 cups chicken broth
  • 10 ounces frozen mixed vegetables, thawed
  • 1/2 cup chopped red bell pepper
  • 1 teaspoon chopped fresh thyme
  • 1/8 teaspoon crushed hot pepper flakes
  • 1 tablespoon chopped fresh basil

Recipe

  • 1 spray saucepan with cooking spray. sauté onion for 3 minutes.
  • 2 add potatoes and 2 cups of chicken broth. bring to a boil. reduce heat and simmer until potatoes are tender, about 10 minutes. remove from heat and let cool slightly.
  • 3 in a food processor, puree potato mixture until smooth. pour soup back into saucepan.
  • 4 stir in remaining chicken broth, mixed vegetables, bell pepper, thyme and hot pepper flakes. return to a boil. cover and simmer until vegetables are tender, about 8 minutes.
  • 5 serve garnished with basil.
