Almond Quinoa Power Bars

Ingredients

- 1/2 cup brown rice syrup or 1/2 cup honey
- 1/3 cup almond butter
- 3/4 teaspoon almond extract
- 2 cups quinoa
- 1/2 cup coarsely chopped almonds
Recipe
- 1 in a large bowl whisk together honey, almond butter and almond extract until well blended. stir in quinoa flakes and almonds until just combined.
- 2 using your hands, press quinoa mixture into foil lined and greased pan. refrigerate for 30 minutes.
- 3 lift mixture from pan and invert onto cutting board. peel off foil and cut into 8 bars.
