Almond Quinoa Power Bars

Ingredients

  • Servings: 8
  • 1/2 cup brown rice syrup or 1/2 cup honey
  • 1/3 cup almond butter
  • 3/4 teaspoon almond extract
  • 2 cups quinoa
  • 1/2 cup coarsely chopped almonds

Recipe

  • 1 in a large bowl whisk together honey, almond butter and almond extract until well blended. stir in quinoa flakes and almonds until just combined.
  • 2 using your hands, press quinoa mixture into foil lined and greased pan. refrigerate for 30 minutes.
  • 3 lift mixture from pan and invert onto cutting board. peel off foil and cut into 8 bars.
