Creamy Vegetables & Fettuccine

Ingredients
- Servings: 6
- 2 cups carrots, diagonally sliced
- 6 ounces fettuccine, uncooked
- 2 cups broccoli florets
- 6 tablespoons butter or 6 tablespoons margarine
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1 cup milk
- 1/4 cup parmesan cheese, grated
- 1/4 teaspoon hot red pepper flakes (optional)
Recipe
- 1 in 3 qt saucepan bring 8 cups of water to a full boil.
- 2 add carrots and fettuccine. cook over medium heat for 6 minutes.
- 3 add broccoli, conitnue cooking until carrots and broccoli are crispy tender (4 to 5 min) drain.
- 4 rinse with hot water, and set aside.
- 5 in same saucepan melt butter.
- 6 stir in flour, salt and nutmeg until smooth and bubbly (1 min).
- 7 add milk, cook over medium heat stirring occasionally, until mixture comes to a full boil.
- 8 stir in fettuccine mixture.
- 9 reduce heat to low, continue cooking until heated through.
- 10 to serve; sprinkle with parmesan cheese and hot pepper flakes is using.
