Creamy Vegetables & Fettuccine

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 2 cups carrots, diagonally sliced
  • 6 ounces fettuccine, uncooked
  • 2 cups broccoli florets
  • 6 tablespoons butter or 6 tablespoons margarine
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 cup milk
  • 1/4 cup parmesan cheese, grated
  • 1/4 teaspoon hot red pepper flakes (optional)

Recipe

  • 1 in 3 qt saucepan bring 8 cups of water to a full boil.
  • 2 add carrots and fettuccine. cook over medium heat for 6 minutes.
  • 3 add broccoli, conitnue cooking until carrots and broccoli are crispy tender (4 to 5 min) drain.
  • 4 rinse with hot water, and set aside.
  • 5 in same saucepan melt butter.
  • 6 stir in flour, salt and nutmeg until smooth and bubbly (1 min).
  • 7 add milk, cook over medium heat stirring occasionally, until mixture comes to a full boil.
  • 8 stir in fettuccine mixture.
  • 9 reduce heat to low, continue cooking until heated through.
  • 10 to serve; sprinkle with parmesan cheese and hot pepper flakes is using.
