Citrus Chicken And Rice

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 boneless chicken breast halves, cut in strips
  • salt and pepper
  • 1/4 teaspoon orange zest
  • 14 ounces chicken broth
  • 1/2 cup orange juice
  • 1 medium onion, chopped
  • 1 cup uncooked long-grain rice
  • 1 tablespoon dried parsley flakes
  • 8 orange slices
  • orange zest (to garnish) (optional)

Recipe

  • 1 sprinkle the chicken breast strips with salt, pepper and orange zest.
  • 2 cook the chicken in a nonstick skillet until browned.
  • 3 remove the chicken and keep warm.
  • 4 pour the broth and orange juice into the skillet.
  • 5 add the onion and rice.
  • 6 stir well and bring to a boil.
  • 7 cover and cook over low heat 10 minutes.
  • 8 return the chicken to the skillet.
  • 9 cover and cook 10 more minutes or until rice is done.
  • 10 stir in the parsley.
  • 11 serve the chicken strips over rice.
  • 12 garnish each serving with two orange slices and orange zest if desired.
