Country Chicken-rice Bake

Ingredients
- Servings: 6
- 3 cups cooked rice
- 1/2 cup sliced celery
- 1/2 cup diced red pepper
- 3/4 cup chopped onion
- 2 tablespoons butter, melted
- 2 teaspoons parsley flakes
- 1/4 teaspoon salt
- 3 chicken breasts, not cooked and in chunks
- 2 (10 3/4 ounce) cans cream of chicken soup
- 2/3 cup miracle whip
- 1/4 cup milk
- 1 lb sliced carrot, cooked
- 1/2 cup of shredded cheddar cheese
Recipe
- 1 preheat oven to 350 degrees.
- 2 combine rice, celery, diced red pepper, onions, butter, parsley and seasonings.
- 3 mix lightly. spoon mixture in greased 3 quart shallow baking dish, top with chicken breast.
- 4 combine soup, miracle whip and milk, mixing until blended.
- 5 pour over chicken and bake 45 minute
- 6 add carrots, top with shredded cheddar and bake 15 minutes longer or until chicken is tender.
