Banana Coconut Muffins

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 12
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 bananas, mashed (3/4 cup)
  • 1/2 cup unsalted butter, melted
  • 2/3 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 3/4 cup sweetened flaked coconut, divided

Recipe

  • 1 preheat oven to 375°f
  • 2 line muffin cups with liners, or spray with nonstick cooking spray.
  • 3 whisk together flour, baking powder, and salt in a bowl.
  • 4 whisk together bananas, butter, sugar, egg, vanilla, and 1/2 cup coconut in a large bowl until combined well, then fold in flour mixture until just moistened.
  • 5 divide batter among lined muffin cups and sprinkle with remaining 1/2 cup coconut.
  • 6 bake about 25 minutes or until muffins are puffed and golden.
  • 7 transfer muffins to a rack to cool.
