Coconut Pound Cake

Total Time: 1 hr 40 mins Preparation Time: 30 mins Cook Time: 1 hr 10 mins

Ingredients

  • 225 g unsalted butter
  • 2 cups sugar
  • 1 teaspoon vanilla essence
  • 6 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 8 ounces flaked coconut

Recipe

  • 1 cream butter and sugar together in a large bowl.
  • 2 add essence.
  • 3 mix well.
  • 4 add eggs, one at a time, beating well after each addition.
  • 5 add flour and salt.
  • 6 mix well.
  • 7 fold in the flaked coconut.
  • 8 mix well.
  • 9 bake in a greased tube pan at 170 for 1 hour 10 minutes.
  • 10 if you dont have a tube pan, use a loaf pan, and reduce the cooking time by 15 minutes, checking for doneness.
