Coconut Pound Cake

Ingredients
- 225 g unsalted butter
- 2 cups sugar
- 1 teaspoon vanilla essence
- 6 eggs
- 2 cups all-purpose flour
- 1 teaspoon salt
- 8 ounces flaked coconut
Recipe
- 1 cream butter and sugar together in a large bowl.
- 2 add essence.
- 3 mix well.
- 4 add eggs, one at a time, beating well after each addition.
- 5 add flour and salt.
- 6 mix well.
- 7 fold in the flaked coconut.
- 8 mix well.
- 9 bake in a greased tube pan at 170 for 1 hour 10 minutes.
- 10 if you dont have a tube pan, use a loaf pan, and reduce the cooking time by 15 minutes, checking for doneness.
