Coconut Crumb Cake

Ingredients
- 2 cups flour
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup flaked coconut
- 1/2 cup butter
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup buttermilk
Recipe
- 1 mix flour,butter, baking powder and sugar with a pastry blender or finger tips until crumb consistency.
- 2 mix buttermilk, eggs, baking soda and vanilla.
- 3 add to crumb mixture. stir in coconut.
- 4 pour in a greased and floured 7 x10 pan.
- 5 bake at 375 degrees for 30-35 minutes.
