Cajun Rice And Black-eyed Peas

Ingredients

  • Servings: 6
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 celery rib, chopped
  • 1 carrot, sliced
  • 1 tablespoon garlic powder
  • 1 teaspoon dried cajun seasoning
  • 1/2 teaspoon salt
  • 1 can chicken broth
  • 3/4 cup uncooked rice
  • 1 can black-eyed peas, drained
  • 1 tablespoon parsley flakes

Recipe

  • 1 in a pot heat oil over medium-high heat.
  • 2 stir in onion, celery, carrot, garlic powder, cajun seasoning, and salt; cook, stirring occasionally, 3-4 minutes.
  • 3 add broth; bring to a boil.
  • 4 stir in rice.
  • 5 reduce heat to medium-low.
  • 6 cover and simmer for 15 minutes.
  • 7 stir in black-eyed peas.
  • 8 cover and simmer for 5 more minutes.
