Crock Pot Potato Soup

Total Time: 10 hrs 20 mins Preparation Time: 20 mins Cook Time: 10 hrs

Ingredients

  • Servings: 6
  • 6 potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 celery ribs, sliced
  • 4 chicken bouillon cubes
  • 1 tablespoon dried parsley flakes
  • 5 cups water
  • 1 tablespoon salt
  • pepper, to taste (optional)
  • 1/3 cup butter
  • 1 (13 ounce) can evaporated milk
  • chives (optional)
  • bacon (optional)
  • cheddar cheese (optional)

Recipe

  • 1 combine all ingredients excet milk and chives in the slow cooker.
  • 2 cover. cook on low 10-12 hours or on high 3-4 hours. stir in milk during last hour.
  • 3 if desired, mash potatoes before serving.
  • 4 garnish with optional ingredients.
  • 5 (add one carrot, sliced, to vegetables before cooking.).
  • 6 (instead of water and bouillon cubes, use 4-5 cups chicken stock.).
