Coconut Pie

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 3/4 cup sugar
  • 1/3 cup flour
  • 1/4 teaspoon salt
  • 2 cups milk
  • 2 tablespoons butter
  • 3 eggs, slightly beaten
  • 1 teaspoon vanilla
  • 1 cup coconut, flaked
  • 1 9-inch baked pie crust

Recipe

  • 1 in a saucepan, combine sugar, flour, and salt; gradually add milk.
  • 2 cook and stir 2 minutes longer.
  • 3 remove from heat, stir in small amount of hot mixture into yolks; return to hot mixture, cook 2 minutes longer stirring constantly.
  • 4 remove from heat.
  • 5 add butter and vanilla.
  • 6 stir until butter is melted.
  • 7 add coconut.
  • 8 pour into crust.
  • 9 top with meringue and sprinkle with coconut.
  • 10 brown.
