Coconut Pie

Ingredients
- 3/4 cup sugar
- 1/3 cup flour
- 1/4 teaspoon salt
- 2 cups milk
- 2 tablespoons butter
- 3 eggs, slightly beaten
- 1 teaspoon vanilla
- 1 cup coconut, flaked
- 1 9-inch baked pie crust
Recipe
- 1 in a saucepan, combine sugar, flour, and salt; gradually add milk.
- 2 cook and stir 2 minutes longer.
- 3 remove from heat, stir in small amount of hot mixture into yolks; return to hot mixture, cook 2 minutes longer stirring constantly.
- 4 remove from heat.
- 5 add butter and vanilla.
- 6 stir until butter is melted.
- 7 add coconut.
- 8 pour into crust.
- 9 top with meringue and sprinkle with coconut.
- 10 brown.
