Buttery Coconut Cookies

Ingredients
- Servings: 30
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter, softened (no substitutes)
- 1 teaspoon coconut extract
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 1/4 cups flaked coconut
Recipe
- 1 set oven to 350 degrees f.
- 2 generously grease a baking/cookie sheet.
- 3 in a small bowl combine the flour with baking soda and salt.
- 4 in a medium bowl cream butter with both sugars and coconut extract.
- 5 add in egg and beat until smooth and creamy.
- 6 add in flour mixture; beat until combined (batter will be slightly thick).
- 7 mix in coconut until well combined.
- 8 drop by heaping teaspoonfuls onto prepared baking sheet spacing about 3 inches apart.
- 9 bake 8-10 minutes until lightly golden brown.
- 10 cool on baking sheet then transfer to wire racks.
