Coffee Nut Tortoni

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 12
  • 1/2 cup almonds, finely chopped
  • 1 cup corn flake crumbs
  • 2 cups heavy cream
  • 1/2 cup confectioners' sugar
  • 3 tablespoons instant coffee
  • 2 teaspoons vanilla
  • 2 drops almond extract
  • 3 egg whites
  • 6 tablespoons sugar

Recipe

  • 1 toast almonds on a cookie sheet in 350 degree oven until edges turn golden brown.
  • 2 add corn flake crumbs to almonds and divide in half.
  • 3 cool.
  • 4 whip cream until almost stiff and add confectioners sugar.
  • 5 beat until stiff.
  • 6 add coffee,vanilla and almond extract.
  • 7 in another bowl,beat egg whites until foamy,gradually add sugar and beat until stiff.
  • 8 fold half the crumb mixture into egg mixture and gently fold into whipped cream.
  • 9 line 12 cupcake papers into cupcake tin and spoon mixture inches.
  • 10 sprinkle remaining crumb mixture over tops.
  • 11 freeze until firm.
