Coffee Nut Tortoni

Ingredients

- 1/2 cup almonds, finely chopped
- 1 cup corn flake crumbs
- 2 cups heavy cream
- 1/2 cup confectioners' sugar
- 3 tablespoons instant coffee
- 2 teaspoons vanilla
- 2 drops almond extract
- 3 egg whites
- 6 tablespoons sugar
Recipe
- 1 toast almonds on a cookie sheet in 350 degree oven until edges turn golden brown.
- 2 add corn flake crumbs to almonds and divide in half.
- 3 cool.
- 4 whip cream until almost stiff and add confectioners sugar.
- 5 beat until stiff.
- 6 add coffee,vanilla and almond extract.
- 7 in another bowl,beat egg whites until foamy,gradually add sugar and beat until stiff.
- 8 fold half the crumb mixture into egg mixture and gently fold into whipped cream.
- 9 line 12 cupcake papers into cupcake tin and spoon mixture inches.
- 10 sprinkle remaining crumb mixture over tops.
- 11 freeze until firm.
