Coconut Pecan Cake With Broiled Frosting

Ingredients

- 2 cups all-purpose flour
- 2 cups sugar
- 1 1/2 cups butter, softened
- 1 cup buttermilk
- 4 eggs
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon vanilla
- 2 cups sweetened flaked coconut
- 1 cup chopped pecans
- 1 cup firmly packed brown sugar
- 1 cup chopped pecans
- 1/3 cup butter, melted
- 1/4 cup heavy whipping cream or 1/4 cup milk
Recipe
- 1 heat oven to 350°f
- 2 combine all cake ingredients except coconut and pecans in large bowl.
- 3 beat at low speed, scraping bowl often, until all ingredients are moistened.
- 4 beat at high speed, scraping bowl often, until smooth.
- 5 stir in coconut and pecans by hand.
- 6 pour into greased and floured 13x9-inch baking pan.
- 7 bake for 45 to 50 minutes or until cake springs back when touched lightly in center and edges begin to pull away from sides of pan.
- 8 heat broiler.
- 9 combine all frosting ingredients in small bowl until well mixed.
- 10 spread over warm cake.
- 11 broil 2 to 4 inches from heat until bubbly (1 to 3 minutes).
- 12 serve warm or cool.
- 13 note: substitute 1 tablespoon vinegar or lemon juice plus enough milk to equal 1 cup. let stand 10 minutes.
