Coconut Pecan Cake With Broiled Frosting

Total Time: 1 hr 20 mins Preparation Time: 30 mins Cook Time: 50 mins

Ingredients

  • Servings: 15
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 1/2 cups butter, softened
  • 1 cup buttermilk
  • 4 eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon vanilla
  • 2 cups sweetened flaked coconut
  • 1 cup chopped pecans
  • 1 cup firmly packed brown sugar
  • 1 cup chopped pecans
  • 1/3 cup butter, melted
  • 1/4 cup heavy whipping cream or 1/4 cup milk

Recipe

  • 1 heat oven to 350°f
  • 2 combine all cake ingredients except coconut and pecans in large bowl.
  • 3 beat at low speed, scraping bowl often, until all ingredients are moistened.
  • 4 beat at high speed, scraping bowl often, until smooth.
  • 5 stir in coconut and pecans by hand.
  • 6 pour into greased and floured 13x9-inch baking pan.
  • 7 bake for 45 to 50 minutes or until cake springs back when touched lightly in center and edges begin to pull away from sides of pan.
  • 8 heat broiler.
  • 9 combine all frosting ingredients in small bowl until well mixed.
  • 10 spread over warm cake.
  • 11 broil 2 to 4 inches from heat until bubbly (1 to 3 minutes).
  • 12 serve warm or cool.
  • 13 note: substitute 1 tablespoon vinegar or lemon juice plus enough milk to equal 1 cup. let stand 10 minutes.
