Banana Bran Bread

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1 cup bran flakes
  • 3/4 cup whole wheat flour
  • 1/2 cup splenda granular, sugar substitute
  • 2 teaspoons baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 2 egg whites
  • 1/4 cup skim milk
  • 2 tablespoons water
  • 2 medium bananas

Recipe

  • 1 preheat oven to 180 degrees celsius.
  • 2 in a large bowl, crush the bran flakes, i just crumble them in my hands, then add the rest of the dry ingredients and mix well.
  • 3 in a separate small bowl mash the bananas with the water then add the egg whites and milk. mix these in well.
  • 4 add the liquid mix to the dry ingredients and mix until a dough is formed. spoon this into a greased loaf tin and bake for approximately 35 minutes or until a skewer inserted in the centre comes out clean.
