Coco Rice With Green Onions

Ingredients

- 2 teaspoons canola oil or 2 teaspoons olive oil
- 1 cup yellow onion, chopped
- 1 cup basmati rice
- 1/4 teaspoon ground turmeric
- 1/4 cup unsweetened flaked coconut
- 1 1/2 cups reduced-sodium fat-free chicken broth
- 1/2 cup water
- 1/4 teaspoon kosher salt
- 1/8 teaspoon fresh ground black pepper
- 1/4 cup green onion, chopped
Recipe
- 1 heat oil in a medium saucepan over medium-high heat.
- 2 add onion; saute 2 minutes or until tender, stirring constantly.
- 3 add rice and turmeric; saute until rice becomes yellow.
- 4 stir in unsweetened coconut.
- 5 add broth and 1/2 cup water; bring to a boil. reduce heat to low and season with salt and pepper.
- 6 cover and simmer 20 minutes or until tender.
- 7 turn off heat, uncover, and let stand 5 minutes.
- 8 fluff with a fork.
- 9 stir in green onions and serve.
