Coco Rice With Green Onions

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 teaspoons canola oil or 2 teaspoons olive oil
  • 1 cup yellow onion, chopped
  • 1 cup basmati rice
  • 1/4 teaspoon ground turmeric
  • 1/4 cup unsweetened flaked coconut
  • 1 1/2 cups reduced-sodium fat-free chicken broth
  • 1/2 cup water
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon fresh ground black pepper
  • 1/4 cup green onion, chopped

Recipe

  • 1 heat oil in a medium saucepan over medium-high heat.
  • 2 add onion; saute 2 minutes or until tender, stirring constantly.
  • 3 add rice and turmeric; saute until rice becomes yellow.
  • 4 stir in unsweetened coconut.
  • 5 add broth and 1/2 cup water; bring to a boil. reduce heat to low and season with salt and pepper.
  • 6 cover and simmer 20 minutes or until tender.
  • 7 turn off heat, uncover, and let stand 5 minutes.
  • 8 fluff with a fork.
  • 9 stir in green onions and serve.
