Banana Creme Pie

Ingredients
- 3 large bananas
- 1 tablespoon lemon juice
- 1 ready-to-use chocolate cookie pie crust
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 2 tablespoons flour
- 1 3/4 cups milk
- 4 egg yolks, lightly beaten
- 1 tablespoon butter
- 1 teaspoon vanilla
- 1 cup flaked coconut
- whipped cream
- banana, for garnish
Recipe
- 1 slice bananas, toss in lemon juice.
- 2 place in bottom of crust.
- 3 in double broiler over hot water, combine sugar, corn starch, flour, and salt.
- 4 slowly stir in milk.
- 5 cool until thickened.
- 6 stir 1/2 cup milk mixture back into eggs.
- 7 stirr egg-milk mixture back into remaining milk mixture.
- 8 cook 2 minutes.
- 9 remove from heat and add butter and vanilla.
- 10 cool.
- 11 pour over bananas in crust.
- 12 top with coconut and chill for 4 hours.
- 13 garnish with whipped cream and bananas.
