Chicken And Cashew Salad Recimeal

Ingredients

  • 2 cups pasta, rotini, uncooked
  • 1 cup pea pods, cut in 1-inch pieces
  • 2 (10 ounce) cans premium chunk breast chicken, drained and flaked
  • 1 (5 ounce) can water chestnuts, drained
  • 1/2 small red bell pepper, cut in 1-inch pieces
  • 1/2 cup chopped red onion
  • 1/2 cup shredded carrot
  • 1 cup light mayonnaise or 1 cup salad dressing
  • 1/2 cup packed brown sugar
  • 1 tablespoon cider vinegar
  • 1/4 teaspoon salt
  • 1/2 cup roasted unsalted cashews

Recipe

  • 1 prepare pasta according to package directions, adding pea pods during last 30 seconds of cooking. drain and cool pasta and pea pods. in a large bowl, combine pasta and pea pods with chicken, water chestnuts, bell pepper, onion and carrots. combine mayonnaise, brown sugar, vinegar and salt; toss with salad. refrigerate for several hours or overnight. just before serving, fold in cashews.
