Ingredients
- 9 -10 lbs lamb shoulder
- 2 sweet onions
- 10 garlic cloves
- 4 bay leaves
- 9 orange slices
- 1 cup cilantro
- 4 tomatoes
- 2 tablespoons cumin seeds
- 1/4 cup oregano
- fresh cracked pepper
- sea salt
- 5 roasted green chili peppers
- 2 tablespoons red pepper flakes
Recipe
- 1 roast lamb @ 250 for approximately 7 hours.
- 2 season lamb with:olive oil,red pepper flakes,cumin seeds,oregano,sea salt, fresh cracked pepper,orange slices, and bay leaves.
- 3 when cool pull the lamb.
- 4 add:.
- 5 roasted,onion,,roasted green chilis,roasted garlic,red pepper flakes,and cilantro.
- 6 heat@225 until hot.
- 7 serve with warm fresh grilled corn or flour tortillas.
- 8 add:sour cream,scallions,pickled jalapenos,tomatoes,cheese,cabbage, and lime wedges.
