Citrusy Orzo And Black Beans

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 cups cooked orzo
  • 1 -2 garlic clove, sliced thinly
  • 1 shallot, diced
  • 1/2 red pepper, seeded and diced into roughly 1 inch chunks
  • 1/2 green pepper, seeded and diced into roughly 1 inch chunks
  • 1 -2 tablespoon olive oil
  • 1 orange, juiced
  • 1/4 cup chopped fresh oregano
  • 1/8 teaspoon red pepper flakes
  • 1 (15 1/2 ounce) can black beans, drained and rinsed

Recipe

  • 1 cook orzo as directed on package.
  • 2 drain orzo, place in a medium bowl and set aside.
  • 3 heat olive oil in a medium skillet over medium-high heat.
  • 4 when the oil is heated (about 2 minutes), add the garlic and shallot. saute until tender and slightly browned, 5 minutes or so.
  • 5 add the green and red peppers. saute until tender-crisp.
  • 6 remove from the heat and combine with the orzo. mix well.
  • 7 add the beans to the bowl and mix to combine.
  • 8 in a separate bowl, combine the orange juice, oregano and red pepper flakes. stir well.
  • 9 drizzle over the orzo and toss.
  • 10 season with additional red pepper flakes if desired and a touch of salt.
