Citrusy Orzo And Black Beans

Ingredients

- 2 cups cooked orzo
- 1 -2 garlic clove, sliced thinly
- 1 shallot, diced
- 1/2 red pepper, seeded and diced into roughly 1 inch chunks
- 1/2 green pepper, seeded and diced into roughly 1 inch chunks
- 1 -2 tablespoon olive oil
- 1 orange, juiced
- 1/4 cup chopped fresh oregano
- 1/8 teaspoon red pepper flakes
- 1 (15 1/2 ounce) can black beans, drained and rinsed
Recipe
- 1 cook orzo as directed on package.
- 2 drain orzo, place in a medium bowl and set aside.
- 3 heat olive oil in a medium skillet over medium-high heat.
- 4 when the oil is heated (about 2 minutes), add the garlic and shallot. saute until tender and slightly browned, 5 minutes or so.
- 5 add the green and red peppers. saute until tender-crisp.
- 6 remove from the heat and combine with the orzo. mix well.
- 7 add the beans to the bowl and mix to combine.
- 8 in a separate bowl, combine the orange juice, oregano and red pepper flakes. stir well.
- 9 drizzle over the orzo and toss.
- 10 season with additional red pepper flakes if desired and a touch of salt.
