Crispy Coconut Lamb

Ingredients

- 1 1/3 cups baker's angel flake coconut
- 1/2 cup seasoned bread crumbs
- 1 egg, well beaten
- 1/2 teaspoon salt
- 1 dash pepper
- 6 lamb chops, 1 inch thick
- 3 tablespoons melted butter or 3 tablespoons margarine
Recipe
- 1 mix coconut with bread crumbs. mix eggs with salt and pepper.
- 2 dip chops in egg; coat with coconut mixture. place in shallow baking pan; drizzle with melted butter.
- 3 bake at 400 degrees for 30 minutes; turn chops and bake 20 minutes longer.
