Chickpea And Pasta Soup

Total Time: 3 hrs 10 mins Preparation Time: 10 mins Cook Time: 3 hrs

Ingredients

  • Servings: 4
  • 1 (15 ounce) can chicken broth
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 (14 ounce) can stewed tomatoes
  • 3/4 cup chopped onion
  • 3/4 cup cubed zucchini
  • 3/4 cup sliced celery
  • 3 -4 garlic cloves, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/8 teaspoon crushed red pepper flakes
  • 1 cup uncooked farfalle pasta
  • 2 -3 teaspoons lemon juice
  • salt

Recipe

  • 1 combine all ingredients, except pasta, lemon juice and salt in a slow cooker.
  • 2 cover and cook on high 3-4 hours, adding pasta during last 20 minutes.
  • 3 season to taste with lemon juice and salt.
