Ambrosia Crepes

Ingredients

- 3 eggs
- 1/2 teaspoon salt
- 1 cup all-purpose flour
- 1 1/2 cups 2% low-fat milk
- 3 tablespoons melted soft margarine, cooled
- 1 (19 ounce) can pineapple tidbits, well drained
- 2 (10 ounce) cans mandarin orange segments, drained
- 1/4 cup sweetened flaked coconut
- 3/4 cup firm orange flavored yogurt, lemon yogurt or 3/4 cup vanilla yogurt
Recipe
- 1 to make crepes: in medium bowl, whisk eggs and salt. whisk in flour, milk and butter until smooth. cover and refrigerate for at least 1 hour.
- 2 stir batter before using. heat a 7 or 8 inch crepe pan or skillet until very hot. it is ready when a few drops of water skitter across the pan and evaporate quickly. grease skillet lightly with oil or shortening.
- 3 raise pan from heat with one hand and with the other hand pour about 3 tablespoons batter all at once into pan. as you pour, turn and tip pan several times so that batter forms a thin film over bottom. cook over medium heat until top is set, about 30 seconds. loosen edges, turn over and cook a few seconds.
- 4 lift cooked crepe with spatula onto wire rack to cool. repeat procedure until all batter is used. makes about 18 crepes.
- 5 to make ambrosia filling:.
- 6 combine all ingredients, chill to blend flavors.
- 7 place about 1/4 cup filling on each crepe, fold as desired. garnish with more fruit and yogurt. drizzle with maple syrup, if desired.
