Coconut Bread

Ingredients
- Servings: 8
- 2 cups sugar
- 1 cup oil
- 2 teaspoons coconut extract
- 4 eggs
- 1 cup buttermilk
- 3 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup , shaved nuts make sure they are shaved (your preferance, walnuts, almond...)
- 1 cup coconut flakes
- glaze
- 1 cup sugar
- 1/2 cup water
- 2 tablespoons butter
- 1 teaspoon coconut extract
Recipe
- 1 mix all ingredients together except for coconut flakes and nuts.
- 2 after mixing ingredients gradually add coconut flakes and nuts.
- 3 bake at 325 for 45-50 minutes.
- 4 glaze.
- 5 add all ingredients into a small pot and let it boil for 10 minutes, it should become a 'syrupy' consistency.
- 6 poke holes in loaves and pour glaze over your delicious coconut bread.
- 7 let glaze solidify and enjoy!
