Cauliflower Cheese Pot Pies

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 6 3/4 ounces creme fraiche
  • 3 1/2 ounces grated cheddar cheese (the best kind you can get)
  • 4 spring onions, shredded
  • 1 head cauliflower, cut into florets (medium size)
  • 3 1/2 ounces frozen peas, defrosted
  • 13 1/4 ounces puff pastry, cut in 4 circles (to fit dishes)
  • 1 egg, beaten
  • 1 pinch crushed red pepper flakes (optional)
  • salt, if needed
  • fresh ground black pepper, if needed

Recipe

  • 1 het the oven to 360ºf.
  • 2 mix the creme fraiche, cheddar, spring onions, cauliflower and peas and divide between 4 small ovenproof dishes.
  • 3 top with pastry circles, press down firmly and glaze with the egg.
  • 4 bake for 25-30 minutes until crisp and golden.
