Deep-fried Wonton Cookies

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 1 1/2 cups chopped prunes, , or substitute chopped dried apples
  • 1 cup chopped dried apricot
  • 1 1/2 cups packed brown sugar
  • 1 1/2 cups flaked coconut
  • 1 cup chopped almonds
  • 24 wonton skins
  • vegetable oil (for frying)

Recipe

  • 1 mix prunes, apricots, brown sugar, coconut and almonds together to make filling.
  • 2 place about 2 tsp filling on centre of each wonton skin; moisten edges with water.
  • 3 fold each skin in half to form a triangle; press edges firmly to seal.
  • 4 cover to prevent drying.
  • 5 heat oil (1 to 1-1/2 inches) to 360f degrees.
  • 6 fry 3 to 4 wontons at a time, about 1 minute on each side, turning occasionally, until golden brown; drain.
