Deep-fried Wonton Cookies

Ingredients
- 1 1/2 cups chopped prunes, , or substitute chopped dried apples
- 1 cup chopped dried apricot
- 1 1/2 cups packed brown sugar
- 1 1/2 cups flaked coconut
- 1 cup chopped almonds
- 24 wonton skins
- vegetable oil (for frying)
Recipe
- 1 mix prunes, apricots, brown sugar, coconut and almonds together to make filling.
- 2 place about 2 tsp filling on centre of each wonton skin; moisten edges with water.
- 3 fold each skin in half to form a triangle; press edges firmly to seal.
- 4 cover to prevent drying.
- 5 heat oil (1 to 1-1/2 inches) to 360f degrees.
- 6 fry 3 to 4 wontons at a time, about 1 minute on each side, turning occasionally, until golden brown; drain.
