Creamy Lemon-kissed Chicken Pasta Salad

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 cup yogurt, lemon low-fat
  • 1/3 cup mayonnaise (or salad dressing)
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon poppy seed
  • 4 ounces pasta, uncooked bow-tie (2 to 2 1/2 cups)
  • 1 (10 ounce) can chicken, premium chunk breast of chicken, drained and flaked
  • 1 (8 ounce) can mandarin oranges, drained
  • 1/2 cup green onion, sliced
  • 1/2 cup celery, sliced

Recipe

  • 1 preparation time: approximately 10 minutes.

  • 4 for the dressing: combine the yogurt, mayonnaise, lemon juice, salt, pepper, and poppy seeds in a small mixing bowl; mix well.
