Congo Bars

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 12
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 cup butter or 1/4 cup margarine, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 3/4 teaspoon vanilla extract
  • 1 cup sweetened flaked coconut
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup chopped walnuts

Recipe

  • 1 heat oven to 350 degrees; grease and flour 9 inch square baking pan.
  • 2 in a small bowl stir flour, baking powder, and salt to mix well; set aside.
  • 3 in a large bowl with electric mixer at medium speed, beat butter and sugar until light and fluffy; beat eggs and vanilla in thoroughly. reduce speed to low; beat in flour mixture just until blended. fold in coconut, chocolate chips, and walnuts.
  • 4 spoon batter into prepared pan, spreading evenly; bake 25 minutes until wooden pick inserted in center comes out clean. cool cake in pan on wire rack; cut into 4 x 1 1/4 inch bars to serve.
