Caribbean Citrus Chicken

Ingredients

- 6 boneless chicken breast halves
- pepper
- salt (optional, i don't use)
- 1 teaspoon minced garlic
- 2 tablespoons butter or 2 tablespoons margarine
- 2 teaspoons finely shredded lime peel
- 1/4 cup fresh lime juice
- 1/2 teaspoon ground ginger
- 1/4 teaspoon crushed red pepper flakes
- 2 medium oranges, peeled
Recipe
- 1 rinse chicken, pat dry with paper towels. season with pepper and salt (optional).
- 2 cook chicken and garlic in butter in skillet over medium heat for 8-10 minutes, or until chicken is tender and juices run clear. turn chicken at least once and stir garlic occasionally.
- 3 while chicken is cooking, combine lime peel, lime juice, ginger, and crushed red pepper.
- 4 peel oranges, removing pith. reserving juice, cut oranges in half lengthwise, then cut crosswise into thin slices.
- 5 add any reserved orange juice and the lime juice mixture to skillet.
- 6 place orange slices on top of chicken. cover and cook 1-2 minutes or until heated through.
- 7 to serve, spoon any drippings over chicken.
