Caribbean Citrus Chicken

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 6 boneless chicken breast halves
  • pepper
  • salt (optional, i don't use)
  • 1 teaspoon minced garlic
  • 2 tablespoons butter or 2 tablespoons margarine
  • 2 teaspoons finely shredded lime peel
  • 1/4 cup fresh lime juice
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon crushed red pepper flakes
  • 2 medium oranges, peeled

Recipe

  • 1 rinse chicken, pat dry with paper towels. season with pepper and salt (optional).
  • 2 cook chicken and garlic in butter in skillet over medium heat for 8-10 minutes, or until chicken is tender and juices run clear. turn chicken at least once and stir garlic occasionally.
  • 3 while chicken is cooking, combine lime peel, lime juice, ginger, and crushed red pepper.
  • 4 peel oranges, removing pith. reserving juice, cut oranges in half lengthwise, then cut crosswise into thin slices.
  • 5 add any reserved orange juice and the lime juice mixture to skillet.
  • 6 place orange slices on top of chicken. cover and cook 1-2 minutes or until heated through.
  • 7 to serve, spoon any drippings over chicken.
