Bowl Of Oatmeal Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup large flake old fashioned oats
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3/4 teaspoon ground cinnamon
  • 1 cup packed brown sugar, divided
  • 2 eggs
  • 1 cup plain yogurt
  • 2/3 cup milk
  • 1/2 cup vegetable oil
  • 2/3 cup raisins

Recipe

  • 1 preheat oven to 400°; line 12-cup muffin pan with paper liners.
  • 2 in a large bowl, whisk together the flour, oats, baking powder, salt, and cinnamon.
  • 3 in another bowl, whisk together 3/4 cup of brown sugar, eggs, yogurt, milk, and oil until well blended.
  • 4 add the egg mixture to the flour mixture and stir until just blended; gently fold in raisins.
  • 5 divide batter equally among prepared muffin cups; sprinkle with the remaining brown sugar.
