Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cup large flake old fashioned oats
- 1 tablespoon baking powder
- 1 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1 cup packed brown sugar, divided
- 2 eggs
- 1 cup plain yogurt
- 2/3 cup milk
- 1/2 cup vegetable oil
- 2/3 cup raisins
Recipe
- 1 preheat oven to 400°; line 12-cup muffin pan with paper liners.
- 2 in a large bowl, whisk together the flour, oats, baking powder, salt, and cinnamon.
- 3 in another bowl, whisk together 3/4 cup of brown sugar, eggs, yogurt, milk, and oil until well blended.
- 4 add the egg mixture to the flour mixture and stir until just blended; gently fold in raisins.
- 5 divide batter equally among prepared muffin cups; sprinkle with the remaining brown sugar.
- 6 bake in a preheated oven for 25-30 minutes or until tops are golden and a pick comes out clean.
