Creole Haddock

Total Time: 23 mins Preparation Time: 15 mins Cook Time: 8 mins

Ingredients

  • 2 lbs fresh haddock fillets
  • 1 1/2 cups fresh tomatoes, chopped
  • 1/2 cup green pepper, chopped
  • 1/3 cup lemon juice
  • 1 tablespoon cooking oil
  • 2 teaspoons salt
  • 2 teaspoons dry onion flakes
  • 1 teaspoon basil leaves, crushed
  • 1/4 teaspoon pepper, coarse
  • 1/8 teaspoon hot sauce

Recipe

  • 1 preheat oven to 500*.
  • 2 place fillets in baking dish.
  • 3 combine tomatoes, green peppers, lemon juice, oil, salt , onion flakes, basil leaves, pepper, and hot sauce.
  • 4 spoon tomato mixture over fillets.
  • 5 bake fillets for 5 -8 min or until fillets flake easily.
  • 6 place fillets on a warm platter.
  • 7 garnish with tomato and green pepper rings.
