Creole Haddock

Ingredients
- 2 lbs fresh haddock fillets
- 1 1/2 cups fresh tomatoes, chopped
- 1/2 cup green pepper, chopped
- 1/3 cup lemon juice
- 1 tablespoon cooking oil
- 2 teaspoons salt
- 2 teaspoons dry onion flakes
- 1 teaspoon basil leaves, crushed
- 1/4 teaspoon pepper, coarse
- 1/8 teaspoon hot sauce
Recipe
- 1 preheat oven to 500*.
- 2 place fillets in baking dish.
- 3 combine tomatoes, green peppers, lemon juice, oil, salt , onion flakes, basil leaves, pepper, and hot sauce.
- 4 spoon tomato mixture over fillets.
- 5 bake fillets for 5 -8 min or until fillets flake easily.
- 6 place fillets on a warm platter.
- 7 garnish with tomato and green pepper rings.
