Chicken With Olives And Tomatoes

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 200 g boneless chicken, cut into 1 inch pcs
  • 1/2-1 tablespoon olive oil
  • salt and pepper
  • 12 olives
  • 4 large tomatoes, blanched and skinned
  • 1 tablespoon oil
  • 3 garlic flakes, crushed
  • salt
  • 1/2 teaspoon pepper
  • 1 teaspoon coriander leaves, chopped

Recipe

  • 1 saute the chicken in the oil.
  • 2 cook till done seasoning with salt and pepper to taste.
  • 3 add water if required.
  • 4 sauce: blanch the tomatoes for 3 minutes in boiling water.
  • 5 skin them and puree them.
  • 6 heat the oil.
  • 7 add garlic and saute for a minute.
  • 8 add the tomatoes puree and cook till slightly thick around 7 minutes.
  • 9 add the salt and pepper with the olives and take off the flame.
  • 10 preheat the oven to 350°f.
  • 11 spread 1/4th of the sauce on a baking dish.
  • 12 sprinkle the chicken pieces on top of the sauce.
  • 13 now add the rest of the sauce over the chicken and sprinkle with the cilantro leaves.
  • 14 bake for 10-15 minutes and serve hot with bread.
