Blue Ribbon Banana Cake

Ingredients

- 3/4 cup butter, softened
- 2 eggs
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 cup buttermilk
- 1 1/2 cups sugar
- 1 cup mashed ripe banana
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 cup flaked coconut
- 1/2 cup chopped nuts (any kind you want)
- 3/4 cup sugar
- 3/4 cup light cream
- 3 tablespoons butter
- 1 teaspoon vanilla extract
- 3 tablespoons flour
- 1/2 teaspoon salt
- 1/2 cup chopped nuts
- 1/2 cup flaked coconut
Recipe
- 1 beat eggs, add sugar, butter, bananas, buttermilk, baking soda, baking powder, vanilla, nuts, coconut and flour.
- 2 mix all together and bake in two 9 x 9 inch round pans at 350 for 35-40 minutes, or until a toothpick inserted near the center comes out clean.
- 3 remove from oven.
- 4 let stand 10 minutes before removing from pans to wire racks.
- 5 cool.
- 6 for icing:.
- 7 mix together all ingredients and cook until thickened.
- 8 pour on cake while frosting is still warm.
