Barbequed Scallops On Rice 1-2-3

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 lbs medium scallops
  • 1/2 cup water
  • 1/2 cup melted butter
  • 1 (6 ounce) can tomato paste
  • 1/4 cup vinegar
  • 3 tablespoons soy sauce
  • 1 1/2 teaspoons cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 tablespoon parsley flakes
  • 3 cups cooked buttered rice

Recipe

  • 1 wash the scallops and pat dry.
  • 2 in a medium mixing bowl, mix together all the ingredients except the rice. refrigerate for at least 2 hours.
  • 3 preheat oven to 450. spread the scallops (with the marinade) evenly in a 13x9 baking pan. bake on top rack of oven for 15 minutes.
  • 4 stir the scallops, turn off the oven and leave them in there for 15 more minutes with the door closed.
  • 5 serve over rice.
