Coconut Chicken Bites

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 3 1/2 cups sweetened flaked coconut
  • 2 lbs boneless chicken, cut into 1-inch pieces
  • 2 teaspoons ground cumin
  • 3/4 teaspoon coriander
  • 1/2 teaspoon cayenne pepper
  • sea salt & fresh ground pepper
  • 2 eggs, beaten

Recipe

  • 1 preheat oven to 325 degrees.
  • 2 bake coconut on a tray until golden, stirring frequently, about 15 minutes.
  • 3 transfer to a bowl and cool.
  • 4 coarsly grind in a food processor and place on a large plate.
  • 5 spray large baking tray with cooking oil.
  • 6 in a bowl, combine cumin, coriander cayenne, salt and pepper. add chicken pieces, turning to coat.
  • 7 dip into egg mixture, and coat with coconut.
  • 8 place tray in fridge for 1 hour.
  • 9 heat oven to 400 degrees. bake chicken until crisp, about 15 min., turning over once.
