Coconut Chicken Bites

Ingredients
- 3 1/2 cups sweetened flaked coconut
- 2 lbs boneless chicken, cut into 1-inch pieces
- 2 teaspoons ground cumin
- 3/4 teaspoon coriander
- 1/2 teaspoon cayenne pepper
- sea salt & fresh ground pepper
- 2 eggs, beaten
Recipe
- 1 preheat oven to 325 degrees.
- 2 bake coconut on a tray until golden, stirring frequently, about 15 minutes.
- 3 transfer to a bowl and cool.
- 4 coarsly grind in a food processor and place on a large plate.
- 5 spray large baking tray with cooking oil.
- 6 in a bowl, combine cumin, coriander cayenne, salt and pepper. add chicken pieces, turning to coat.
- 7 dip into egg mixture, and coat with coconut.
- 8 place tray in fridge for 1 hour.
- 9 heat oven to 400 degrees. bake chicken until crisp, about 15 min., turning over once.
