Cauliflower Cheese Pot Pies

Ingredients
- Servings: 4
- 6 3/4 ounces creme fraiche
- 3 1/2 ounces grated cheddar cheese (the best kind you can get)
- 4 spring onions, shredded
- 1 head cauliflower, cut into florets (medium size)
- 3 1/2 ounces frozen peas, defrosted
- 13 1/4 ounces puff pastry, cut in 4 circles (to fit dishes)
- 1 egg, beaten
- 1 pinch crushed red pepper flakes (optional)
- salt, if needed
- fresh ground black pepper, if needed
Recipe
- 1 het the oven to 360ºf.
- 2 mix the creme fraiche, cheddar, spring onions, cauliflower and peas and divide between 4 small ovenproof dishes.
- 3 top with pastry circles, press down firmly and glaze with the egg.
- 4 bake for 25-30 minutes until crisp and golden.
