Chicken With Olives And Tomatoes

Ingredients

- 200 g boneless chicken, cut into 1 inch pcs
- 1/2-1 tablespoon olive oil
- salt and pepper
- 12 olives
- 4 large tomatoes, blanched and skinned
- 1 tablespoon oil
- 3 garlic flakes, crushed
- salt
- 1/2 teaspoon pepper
- 1 teaspoon coriander leaves, chopped
Recipe
- 1 saute the chicken in the oil.
- 2 cook till done seasoning with salt and pepper to taste.
- 3 add water if required.
- 4 sauce: blanch the tomatoes for 3 minutes in boiling water.
- 5 skin them and puree them.
- 6 heat the oil.
- 7 add garlic and saute for a minute.
- 8 add the tomatoes puree and cook till slightly thick around 7 minutes.
- 9 add the salt and pepper with the olives and take off the flame.
- 10 preheat the oven to 350°f.
- 11 spread 1/4th of the sauce on a baking dish.
- 12 sprinkle the chicken pieces on top of the sauce.
- 13 now add the rest of the sauce over the chicken and sprinkle with the cilantro leaves.
- 14 bake for 10-15 minutes and serve hot with bread.
