Banana Pudding

Ingredients

- 6 overripe bananas, peeled and mashed
- 3 tablespoons melted butter or 3 tablespoons margarine
- 1 cup orange juice
- 1 cup sugar
- 3 egg whites, beaten to stiff peaks
- 2 tablespoons sweetened flaked coconut, for garnish
Recipe
- 1 preheat oven to 325.
- 2 in medium mixing bowl, use mixing spoon or electric mixer to mix bananas, melted butter or margarine, orange juice, and sugar.
- 3 using whisk or rubber spatula, carefully fold in stiffly beaten egg whites. transfer mixture to buttered or nonstick casserole or baking pan.
- 4 bake in oven for about 40 minutes, or until puffy and golden brown.
- 5 remove from oven and sprinkle top with shredded coconut.
- 6 serve immediately right from the casserole or baking pan.
