Banana Pudding

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 6 overripe bananas, peeled and mashed
  • 3 tablespoons melted butter or 3 tablespoons margarine
  • 1 cup orange juice
  • 1 cup sugar
  • 3 egg whites, beaten to stiff peaks
  • 2 tablespoons sweetened flaked coconut, for garnish

Recipe

  • 1 preheat oven to 325.
  • 2 in medium mixing bowl, use mixing spoon or electric mixer to mix bananas, melted butter or margarine, orange juice, and sugar.
  • 3 using whisk or rubber spatula, carefully fold in stiffly beaten egg whites. transfer mixture to buttered or nonstick casserole or baking pan.
  • 4 bake in oven for about 40 minutes, or until puffy and golden brown.
  • 5 remove from oven and sprinkle top with shredded coconut.
  • 6 serve immediately right from the casserole or baking pan.
